MANGSA DALMA, An Heirloom Recipe.

The recipe is very different from any recipe you may have seen till date as you will see. Make this delicious recipe at home and it will be divine!!!

Written Recipe:-

MANGSA DALMA MASALA

cumin seeds 2 tsp

fennel seeds 2 tsp

peppercorns 2 tsp

cinnamon 2 sticks

red chillies 3-4 nos

OTHER INGREDIENTS

mutton on bone 1/2 kg

yellow moong dal 1cup

raw banana 2 nos

potato 2 nos

pumpkin 100 gms

colocasia 4-5 nos

yam 100gms

ginger 2 inch pc

garlic 12-25 pods

green chillies 2-3 nos

ghee 2 tbsp

bay leaves 2 nos

onions 3 med sized

salt to taste

haldi 1/2 tsp

TADKA/TEMPERING

ghee 2 tbsp

jeera 1tsp

heeng 1/2 tsp

crushed ginger 2 tbsp

red chillies 2-3 nos

TO MAKE MANGSA DALMA MASALA

roast all whole spices except bay leaves

remove and let it cool

grind together into a powder and keep aside

COOKING PROCESS

roast daal till it begins to change colour

remove in a bowl

wash and soak in water

crush ginger, garlic, green chillies together and keep aside

In a pressure cooker, Heat Ghee, add bay leaves and onions

saute till transparent

add the crushed aromatics

saute for 3-4 minutes

add the mutton

saute for 3-4 minutes

add salt and haldi

mix well

add hot water 500 ml

pressure cook for 1-2 whistles

release pressure and open

add the soaked dal and vegetables

mix everything

hot water 200 ml or as needed

pressure cook for 2 whistles

let the pressure open on it own

add the roasted masala 4-5 tbsp

mix gently

TADKA/TEMPERING

Add ghee and let it get hot

Add jeera, heeng and crushed ginger

let the ginger turn golden

Add the red chillies

let it get crisp

pour over dalma

give it a gentle mix

cover and rest for 15 minutes before serving
